umami healing soup

I created this recipe when I had a cold & needed healing nourishment. it warms you from the inside out, and serves you perfectly on those days when your body craves comfort, and your soul needs grounding.

ingredients
3 onions, chopped
6 cloves garlic, thinly sliced
1-2 tbsp grated ginger
2 tbsp tomato paste
2 tbsp organic powdered vegetable stock
1 tbsp salt
olive oil, plenty
3-4 carrots, sliced
1 bell pepper, chopped
4-5 potatoes, chopped
1 cup frozen cauliflower
1 cup sliced cherry tomatoes
2-3 bay leaves
2 tbsp parsley
2 tbsp dill (fresh or frozen)

method:
add onions to big pot and sauté generously in olive oil until golden. add tomato paste, garlic, ginger, and carrots, and roast together to awaken the aromas. fill up pot with water, then add potatoes, vegetable stock, salt, and bay leaves. cook for about 10 minutes. add cauliflower and bell pepper, simmer for another 15 minutes until everything is cooked soft. remove from heat and stir in the cherry tomatoes and herbs. let it sit for a few minutes to allow the flavors to come together.
