plantbased Borscht (Slavic beetroot soup)

a hearty soup that warms your heart on the way to your stomach.

ingredients:
1 large onion, diced
3 cloves of garlic, finely chopped
2-3 carrots, grated
2-3 bay leaves
500g (3 cups) beetroot (I prefer the cooked ones), grated
6 midsize or 3 big potatoes, roughly chopped
1 midsize (or half of a big) white cabbage, thinly sliced
traditionally sunflower oil, I use olive oil
1 cup fresh dill and parsley, chopped

sour cream to serve (I use a fermented soy alternative)

method:
in a pot, generously roast onions in olive oil until deep brown. add carrots and beetroot and sauté everything until the aromas unfold. add garlic and cabbage, sauté until the cabbage shrinks in size. fill up pot with water, add potatoes and spices. let it simmer for 30 minutes, turn down the heat and add fresh herbs.

serve in a bowl with a tablespoon of sour cream.
